Crispy Oven Baked Fries

5 or 6 russet potatoes, peeled and sliced into 1/3 inch-thick french fry-style strips
1 tablespoon extra-virgin coconut oil
2 tablespoons salted (grass fed) butter
real salt to taste

1. Place cut potatoes into a large bowl of cold water.  Allow to soak for about 20 minutes.  This remove the starch making your fries more crispy.

2. Preheat oven to 400 degrees. Place oil and butter in a bowl and put in oven to melt while it preheats.

3. Drain the potatoes and pat dry with paper towels.  Return to bowl and drizzle with melted oil and butter.  Stir to coat.  Spread potatoes out on rimmed baking sheet and sprinkle with salt to taste.

4. Bake for 45 to 50 minutes until potatoes are golden brown.  Use a metal spatula to scoop up fries.  Enjoy with ketchup!

Granola

Granola:
6 1/2 c. rolled oats (not quick cooking)
2 1/2 c. coconut
1 c. raisens
1 c. dried cranberries
1 1/2 c. almonds (whole, chopped, or sliced)
1 1/4 c. pecans (whole or chopped)
1/2 c. honey
1/2. c. melted coconut oil
1/2 c. sunflower seeds
1/2 c. flax seeds
1/2 tsp salt
1/2 tsp cinnamon

Preheat oven to 350 degrees.  Combine all ingredients. Mix to distribute oil and honey.  Line a large baking sheet with parchment paper.  Spread granola on parchment paper.  Bake 15 to 20 minutes rotating pan half way through.  Mixture will be moist but will clump and crisp as it cools.  Store in covered container for 1 to 2 weeks.

Note:  You can add or leave out whatever ingredients you want or have on hand.  I have made it with just oats, almond, honey, and coconut oil.  The most important thing is to at least have oats, coconut oil, and honey.  The rest is optional

Bundt pan garlic knots

Pizza dough
4 tbsp butter
3 cloves garlic
salt
pepper
rosemary
parmesean
provolone
marinara sauce

Melt butter and garlic (grated or minced) in pan on stove.

Roll pizza dough into 3/4" logs and cut dough into bite sized pieces.  Cover with garlic butter, salt, pepper and rosemary.  Put half in bunt pan.  Layer with cheese (I think I'll do parmesean and mozzerella).  place the rest of the dough on top and layer with cheese again.

Bake at 400 degrees for 30 minutes.  Dip in Marinara sauce.

I saw this on Rachael Ray but haven't tried it yet.

Pumpkin Roll-ups

I was looking for something fun to eat on Halloween and came across this.  I added some ham to it to make it a little more filling and we loved it.

Ingredients
  • Cream cheese or American cheese
  • Sun-dried-tomato tortillas
  • Toothpicks
  • Cilantro or parsley sprigs*
Instructions
  1. Spread cream cheese or lay American cheese slices on sun-dried-tomato tortillas.
  2. Roll them up, then cut them into 1-inch sections. Secure with a toothpick topped with a cilantro or parsley sprig.
*I just used lettuce
