Baked potato, salad, the best cauliflower of your life (Really. This stuff is good. I crave it.)

Grilled cheese, tomato soup, pineapple, veggie tray
Homemade pizza (with this sauce)
Whole wheat soaked crepes with fruit and eggs
Manacotti, salad, the best brussel sprouts of your life (Really. They were really good.)

Roasted Brussels Sprouts w/ Pine Nuts
2 lbs brussels sprouts
1 t dried thyme
1 t dried oregano
1/4 cup pine nuts
1 t garlic powder
1/4 cup olive oil
1/4 cup balsamic vinegar
kosher salt and ground pepper
Heat the oven to 400. Cut the bottoms off the brussels sprouts and rinse. Cut them in half and put them on a cookie sheet. Add the thyme, oregano, pine nuts, garlic powder and salt + pepper. Drizzle with the olive oil and vinegar and toss to coat. Cook for 20 minutes, then give it a good stir, and cook for 5 minutes more or until everything is nice and caramelized.
I'm going to try brussel sprouts! I've heard they're really good if you know how to cook them. I found this recipe at Word of Wisdom Living. I'll let you know how it goes!
