I got the spinach enchiladas from one of Amy's pins on pinterest. It was pretty good. I would probably do a little less spinach next time. I didn't put a lot of enchilada sauce on because Austin doesn't like much spice, but the spice helps mask the spinach taste. Austin said he couldn't even taste the spinach.
